The first recorded mention of pancakes dates back to ancient Greece where in 600 BC a poet described warm pancakes in one of his writings. The pancakes the ancient Greeks ate were called tagenites and were made with wheat flour, olive oil, honey, and curdled milk. In 1100 AD Shrove Tuesday (Pancake Day) becomes a traditional way to use up dairy products before lent. This was when the pancake breakfast was born.

Citrus Pancakes With Quinoa
Makes around 17 pancakes

½ cup cooked quinoa
½ cup oat flour
¼ cup gluten free self-raising baking flour
2 tbsp. coconut flour
1 tsp. baking powder
¼ tsp. salt
½ tsp. cinnamon
1/3 tsp. nutmeg
zest of ½ lemon
zest of ½ mandarin
½ tsp vanilla extract
½ tsp orange extract
2 tbsp. maple syrup
1 tbsp. lemon juice
1 tbsp. mandarin juice
1 tbsp. melted coconut oil
½ cup dairy-free milk
Mix all the dry ingredients in a bowl. Don’t forget to sift the flours.
Mix the wet ingredients in a separate bowl and add them to the dry ingredients. Stir together with a spatula.
Fold in the quinoa until incorporated.
Heat a pancake griddle over medium heat (we used a flippin' silicone mold nonstick baking pancake form). Grease the griddle with some coconut oil if needed.
Start poring the batter into the form.
Cook for about 2 min on one side and 1 min on the other.
Serve with maple syrup, fresh fruit and hazelnut cocoa spread.
