2 HEALTHY PUMPKIN THANKSGIVING DESSERT RECIPES

Thanksgiving is just one day, but it is definitely capable of ruining our efforts to stay lean, fit and healthy for a whole year. People consume 3,000 to 5,000 calories around the Thanksgiving table. More than one third of those calories come from desserts and sugary drinks. 

 

Here is some news, guys! You can still enjoy something sweet and satisfy your sweet tooth, yet not give up on your good health this Thanksgiving. We are giving you two amazing healthy pumpkin recipes by 2 Health App to try! 

 

Pumpkin Cake

 

Time: 60

Prep time: 10

Serves: 6-7

 

Ingredients:

2 large organic eggs

½ cup coconut oil, melted

½ cup coconut sugar

½ cup maple syrup

1 cup organic yogurt (full fat preferably)

2 cups organic gluten free plain white flour blend

1 tsp. pure vanilla extract

½ tsp. gluten free baking soda

1 tsp. cinnamon

1/3 tsp. nutmeg

1/3 tsp. ground ginger

1 tbsp. almond butter (preferably crunchy)

8-10 tbsp. pumpkin puree

 

Directions:

 

  • Start with putting the baking soda into the yogurt. Wait for approximately 1 min observing the fizzing and foaming.

  • Put the two eggs in the kitchen robot and whisk them slightly.

  • Then gradually start adding the sugar, maple syrup, vanilla, coconut oil, cinnamon, nutmeg and ginger.

  • Add the puree and the nut butter.

  • Now it’s time for the yogurt with the soda and the flour.

  • Mix well until homogeneous and make sure that you don’t have any bumps into the mixture.

  • Bake in preheated oven at 170 degrees C (fan) until golden brown or until a toothpick comes clean (for about 50-55 min).

 

Tips:

 

  • You can also make everything by hand instead of using the robot.

  • Pour the mixture into a muffin pan for a party food option or healthy Thanksgiving treats for children.

 

Instead of drinking the sugary, full of bad calories typical Thanksgiving drinks such as punch and cold tea, try our amazing 
pumpkin smoothie. 

 

 

Happy Pumpkin Smoothie

 

200 ml walnut milk (or any other dairy-free nut milk that you fancy)

100 ml kefir

5-6 tbsp. fresh pumpkin puree 

1 frozen banana

½ tsp. cinnamon

1/3 tsp. nutmeg

¼ tsp. ground ginger 

 

Pour everything in a blender and blend until smooth and creamy.
